Easy Eggs with Smoked Salmon

"This is a superb breakfast, brunch or even a great lunch option." - Jo Gray Packed with protein, tastes delicious and so easy to make! Serves: 2Prep Time: 5 minsCook Time: 4 mins     INGREDIENTS 2 slices of smoked salmon 2 eggs 1 avocado 2 slices of artisan sourdough bread as an option 2 tsp capers 1 tsp kalonji seeds for sprinkling Fresh dill to garnish Rocket leaves or salad leaves 1 fresh lemon Knob of butter for buttering the toast    METHOD Heat water in a pan, add some salt and a dash of malt vinegar. Bring to the boil and then crack your eggs into the water.  Cook your eggs for about 4 mins for a soft egg and more for a harder egg (this time depends on the size of the egg and if you are cooking straight from the fridge or not). Meanwhile: Peel and de-seed the avocado, slice and squeeze with lemon.  Toast the bread on both sides and lightly butter.  Arrange the salmon slice on each sourdough slice.  Carefully place the cooked egg on top sprinkle on the Kalonji seeds to finish!
