Packs in flavour, whilst staying low calorie and highly nutritious!\nServes: 1Prep Time: 10 minsCook Time: 10 mins\n\n \nINGREDIENTS\n6 King prawns peeled with no head and deveined\n100g mixed salad leaves\n180g watermelon cut into bite size chunks\nA small handful of blueberries (for scattering)\n100g feta cheese\nMarinade\n1 tbsp tikka powder\n2 tbsp natural yoghurt\nOlive oil ½ tsp\nGarlic puree\nSea salt to taste\n\n½ fresh lime\nDressing \nOlive oil ½ fresh lime\nGGC (ginger garlic coriander)\n1tsp sumac powder\n1tsp white wine vinegar\n \n\n \nMETHODDressing \nMake the dressing up front so it can have a chance to infuse and mingle.\nAll the ingredients into a jar with a lid and SHAKE!\nSet aside until you need it! If you have extra – it keeps in the fridge for a couple of weeks. It’s great on any salad!\n Marinade\nCombine all the marinade ingredients and cover the prawns (this can be done ahead if you have time)\n Cook\nHeat the pan, add a little oil and cook the prawns for a few minutes each side until cooked through.\nMake sure all of the mixture goes in, so it really gives the prawns an intense taste.\nOnce cooked through take off the heat and leave to cool in the pan.\nArrange the salad leaves in individual bowls – use your best dishes as this is a rather special salad.\nAdd the dressing to the leaves and gently turn over the leaves to ensure the leaves have that tangy dressing on them.\nAdd in the prawns and watermelon, then sprinkle on the feta cheese and a last squeeze of lime.
